Thoroughly wash all apples before peeling them. Cut the peeled apples into wedges and place them in the crockpot.
Add all other ingredients to the crockpot giving the apples a quick mix.
Turn the crockpot on low and let them cook for about 6 hours until they're soft enough to blend.
Turn off the crockpot and let the apples cool some before blending. Using an immersion blender in the slow cooker, blend the apples until they reach the desired consistency. Use caution as the mixture may still be hot and can splash if the blender is not fully immersed in the liquid.
Serve applesauce at room temperature or chilled.
Notes
The apple varieties used can be changed, depending on what you have available. This mixture is used to impart a natural sweetness to the applesauce - balancing the sweet and tart flavors of the different apples - because no sugar is added to this recipe. However, any apple will do, it will just change the flavor. When blending, consider where your baby is on the Texture Timeline™. If they've moved on to phase 1, small lumps will be ok. If they're still on phase 0, you'll want to blend until smooth and may need to add some water depending on how thin the mixture is.Store applesauce in the fridge, in an airtight container for up to 5 days. You can also freeze the applesauce in an airtight container, or in a Ziplock bag with the air removed, for approximately 1-2 months.
